Agreed. Better than pulled pork. I've seen it labeled as Beef Shoulder Roast, Beef Pot Roast, and other names. I cooked it like brisket, low and slow and wait until my Thermapen goes in like butter. Usually 195 - 205.
For a grill costing $1000 you shouldn't have to do any mods to make it safe. I agree the lower vent is hard and I personally never open it pass 80% now.

Finally they found my second box. I've been trying to egg for almost 3 weeks. I'm going to make some ribs and smoked bologna. If you haven't have smoked bologna you are missing out. I'll take pics of my first meal! Can't wait
I waited about 1 month. My co-worker told me about the BGE. I was getting a custom pit built that was going to cost $2500. Now I can get two eggs if the first one works like I hope. I'm still a newbie.
Thanks guys. I'm still having issues with Ferguson (The authorized dealer). They say it will take until Tuesday. I'm about to explode... Never go with a brand new dealer lol. The only good thing is I saved $500. Now I see why.
They are "looking into it." They lady I've spoken with is really helpful and nice, but I'm ready for some grilling. I need to seal the table anyway. So I couldn't put the egg in today. Still frustrating.
