When I go direct on grate with no skin I will cook longer on first side. It seems to hold together better- make sure grate is oiled and I would also cut the large filet into manageable pieces. Makes it much easier to flip without breaking apart.

Definitely brine and I agree on the breast only. I did one from last year raised direct at about 350. They are pretty good but not as meaty as the store bought.
Guys- I made some this weekend and they cooked for almost 1.5 hrs at 350 and the bones were still slightly red in spots. They were full wings so maybe that was why?
