I have a buddy that owns T-Bone Tom's in Kemah, Texas. His place has been on Diner, Drive-Ins and Dives and I can tell you the food is great! Doesn't help for Reno, but this is the only experience I have in a DDD dive.
No one has mentioned Shady Grove. Very good burgers on Barton Springs Rd next to Chuy's. If the weather is nice it is great to sit outside, listen to some tunes, drink beer and eat big burgers.

Maybe it is due to the mild wood types you are using. Also try to smoke without soaking the chips. I think when you soak you get too much steam from the wood drying out before you actually get wood smoke...does that make sense?
