If these are flour than I assume you are hand rolling the tortillas not using a press. That may be why they are smaller in size. I have to use a round rolling stand about a foot wide to roll a good flour tortilla.
Just finished making tortillas using a TAVA on a XL-egg and pressing very thin using a press from India. I have several metal presses but the Formica surface on the press I am using make really thin and round tortillas.

The basic recipe for bread is
5 cups high gluten four
2 cups water
1 table spoon salt
1 table spoon yeast
Mix dough until a even ball of dough is formed and let it double in size.
