I live in same area and chose cedar for my table. Holds up well in this climate, great strength and attractive. My LBGE is on a covered deck as well so minimal exposure to the rain. YMMV.
It was great. Brisket went on the LBGE at 6:30 AM and removed at 11:30AM, wrapped the covered pan in 3 towels and let it sit on kitchen counter until 3:00 and then sliced it up. Everyone was impressed with tenderness and flavor.

Have you looked at the PSWoo3 from Ceramic Grill Store? It provides an easy way to lift everything out of the egg at one time. Also makes it pretty easy to switch from indirect to direct too.

This is how I did salmon for Christmas Eve. It's cedar planked with peach slices and soy ginger vinaigrette. I found the recipe on the BGE site and used peach slices instead of fresh peaches.
