I started with a large and it worked out 95% of the time but I longed for an XL for those larger cooks.

I don't know that there is a official take down date. However we have always put ours up Thanksgiving night and take them down January 1st. I enjoy them being up until New Years. Just a tradition that we have always enjoyed and stuck …
Large and a XL here.
I have thought of a medium but we shall see.
I seem to have the large pretty full on most cooks anyway.
I do not use the XL nearly as often but it is nice when more space is needed.
