you cant calibrate it but should test both in a boiling pot of water to ensure it is working correctly.

agreed. the 4 seconds it takes to give me a reading is wayyyyyyyyyy tooo long. i mean all the thermapen has to do is look at the meat and it tells you the temp instantaneously=))

most will say thermapen and they are right. i did however opt for this one made by cooperatkins. it was 30 bucks and reads just as quick as a thermapen and has been very reliable thus far. you can buy it on amazon.

Rosati's has good pizza but it is not consistent from location to location i have noticed here in chicago. hopefully you get a good one down there. i do like their thin their thin crust and sausage.
