Yup, the Super Secret Sweet and Salty Rub has to be broken up every time. I would never add an anti caking ingredient. Natural all the way.
Any stone size that allows you to elevate above the grid will work as long as you allow the stone to heat soak a good long time. I turn a Woo upside down to raise the stone. IMHO high in the dome is crucial to good pizza.

The bricks let me mimic yakatori style. I do some real yakatori recipies, but this was just off the cuff. I think some of the grilled meats look better without the grid marks and the texture is good. Of course it raises the cook area higher.
