I heard BBQ pigeon in the superdome was off the chain! Brackish bayou water makes an excellent marinade. When the big shaker comes, I will be a comfy as a pig in .... here with my spatchcocked racoon and a shotgun.
Some people don't like to BBQ. They may like to eat BBQ, but doing it themselves is not their thing. My mom has a Large (she works for a distributor, gets a killer discount) but she doesn't like having to clean it, light fires, store charcoal and li…
One of the great things about living in the US is I can afford to throw away food if I don't trust it. However, I woulda cooked that badboy (to the old USDA 160) and then given it a try. Tastes wrong, spit it out and toss the rest. One mouthful won'…
Prices are down here for beef. That just means that next year will be expensive with the ranchers selling off whole herds. Some recession we are in, everything costs more, except my mortage and my wages...
I grow my own. Once they set fruit, I stop watering. They are too hot for me to eat raw. One drawback is they rarely grow as pretty when they get little water. My advice, buy the ugly jalapenos if ya want em hot.
Harbaugh will lead us to the promised land again! I root for the raiders cuz they are local, but the niners are my team. Hope Mark gets the raiders back to respectable, would love a niner/raider superbowl!
I think DP's descriptions are pretty accurate. Their reccomendations for which rub is right for which type of meat are spot on. Except swamp venom, for me, I put that Sh!t on everything!
I noticed that after my firebox grate broke into 3 pieces my fires started quicker. I just arrange the pieces of grate with some overlap so it doesn't fall in the ash pit. Almost impossible to stir your charcoal, and the wiggle rod collects dust. H…
I get a lot of my meat at costco. Most of the time the prices are good, they have sales like anywhere else. Beef is usually choice, with some prime available. I have a chest freezer, so I tend to take advantage of their sales and stock up.
Glad it worked out well. Nothing worse than having such an expensive cooker ruining your food, lol. Sounds like you got the method down now to have many successfully cooks!
Slice it against the grain, it will be more tender. Grain changes d irection on a tri tip, so the slices are all different sizes. It looks like you sliced with the grain there phil, but it is hard for me to tell from the picture. Just from experienc…
I would not low and slow a tri tip, it is a lean cut. To each their own though. That guy that won the pitmasters tri tip competition butchered it in my opinion. Apparently it tasted good though.
9.49/lb hurts.
I tried a reverse sear last night. Roasted at 300 indirect till internal was at 125. Set up direct and let the air fire it up. Got to about 600, put the tri tip back on for about 1 min a side. The end result was very tender and pret…
Now stike, don't get testy cuz you were wrong. Maybe you should stick to posting doctored pictures if you can't accept when you make a mistake.
Sodium nitrate is different than nitrate, look at a chemistry book. Carbon monoxide is non toxic, it jus…
The nasty smoke from incomplete combustion can taste kinda chemical like. That smoke can come from lump, smoking wood or drippings. I always leave my daisy wheel open and also never shut the bottom vent completely. Also wait for the smoke from your …
