The egghead population in N. Texas is growing like crazy. I've been teaching BGE cooking classes at my distributor's location... 20 people each class... it's really pretty cool. The Plano Eggfest should be hopping this year.

I agree with jaydub...hit your target on the way up. I leave dome open bottm vent fully open, no daisy wheel for about 5 minutes. Close dome... watch temp at 250, I add daisy fully open, and close down bottom vent. I find I can control the temp easi…

I do cooks like that all the time. Pull the ribs... open up the vents. you can go from 250 to 350 in the time it takes to tent the ribs...and open a beer. I usually have mac -n-chz ready to go in a dutch oven... or bbq beans... or any other side... …
Welcome! Even though the BGE is consistent, I had many a sleepless night babysitting temp. I got a DigiQ...and sleep like a baby now. 12 hours later temp various maybe 1 degree!
thanks to all... knew the gasket needed to be replaced, and I needed a good cleaning. Just didn't think I would melt the gasket to the point I couldn't get back in. It took some prying, and a few "colorful" words to get it open again!
