As from Vietnamese descent I can't tell you that fish sauce won't be good. In the lobster you can put some cilantro, garlic and lemongrass to marinate in the fish sauce, and then inject in the shell.

For pizza I got thermonuclear before putting the plate setter. Open vent, no daisy wheel, firebox cranked with lump and voila... 600 F within 15 minutes, the I put the PS, reduce the vent to an inch,and it stabilize to 550 F.

I cooked 2 butts last nite and the fire shut down again... Even with a 9.5" grille from my mini as a fire grate. So today I cooked it at 300 F but I could bring it to 195 F in time so I sliced it and all my guest were really happy.
