  • It was still hot at 4pm when I pulled it.  I think if I hadnt have opened the cooler at lunch it would have been even hotter.  
  • I might add that I didn't take the foil off, but it was hot through the towel, so I assumed it's still hot.

  • I've been using the cheap weber starter sticks I get a the grocery store (I break them into 4 pieces and use 2 each cook). They work pretty good, but with my new highq grate, I feel like I could light faster with something else.

  • I'm right there with you too. It's just awkward, but I love my thermapen. Food has been perfectly cooked since I got it. Not that it wasn't before

  • Using the ceramic lid instead of the daisy wheel will put the fire out QUICK (well, that and closing the bottom off).  Mine has usually cooled off in a couple hours.  
  • I have the PSWoo2, bc I have no interest in using a wok. I wish I had went ahead an spent the money on the adjustable rig and grill extender. Not to say I don't like the woo, but the AR is just more flexible.

  • I had a nomex but it became stiff and leaked smoke like crazy. Just replaced with the Rutland gasket. Works great.

  • I have tried it and was not impressed. I started making my own using some recipes from http://www.pizzamaking.com/forum/index.php used King Arthur Bread Flour. It was delicious. (I think it was the mellow mushroom recipe)

  • After reading up on the ceramic grill site, I think I am going to get the PSWoo3 and grill extender since I already own a plate setter and another grid. Any opinions on this or suggestions?

  • Be SURE to watch out for flashback when cooking at high temps. Lost lots of arm hair by not paying attention!!! Glad it wasn't worse.

  • Yeah, I live in south alabama (Auburn) so cold is not an issue.
  • If you're not experienced with smoking you should try different woods until you find your favorites. I really like apple wood for pork. You will begin to notice subtle differences as you do more smokes.
  • Sorry, I am not making anything for the lunch, but there will be turkey and ham, so we may not want to eat that for dinner. I thought about a pork loin.... It's for about 15 people.
  • Yes, spar vanish is what I bought... The great thing about this table is, minus some new tools (toys!), I think I have a total of about $20 in it. Really helps when you have some free wood!

  • Agreed. You need a couple more hours on the smoker. Also Be sure you're pulling off the silver skin on the back of the ribs too. (try using a paper towel for tough ones).
