I have ordered live crayfish several times from Cajun Grocer with no problems. They're not cheap to have shipped (I am in Nebraska), but they have always arrived alive and the size and quality is excellent.
Grill marks are overrated. When have you ever been to a really nice steak house and seen grill marks?
Once you go crust, you'll never return. Sear with a CI or SS pan on your egg or stove top. Nothing better man.
