  • do to kids sports on weekend, I have to do this all the time.   It is nice knowing all is well with the egg when your away.  Does make others worried that you are not watching it, but they do not know.     Good job

  • After the fire is out, I open the vent at the bottom, with the screen closed.  Keeps bugs out.     This has cured my issues with mold, since it is hot and humid in houston. I use mine on the weekends only really. 
  • I use cherry with Pecan for a milder mix. Always use pecan with brisket. Never used mesquite on slow smokes. Mesquite is used in some places since it is cheap. Good for hot coals for fajitas.
