  • Boxerpapa, TRex the filets and while they rest bring the egg down to 400. cook the tails a couple minuites each side and remove place the filets on again till half the doneness (med rare here)flip and return the tails to finish.

  • RTEGH, Cut the shell down the back pull up the meat. Grill meat down first then finish with the shell on the grill.Brush with a mixture of butter and fresh garlic. medium heat do not over cook. I suggest a brut Champagne.

  • BeerMike,Yes it is covered. I broke mine a couple years ago and the Outdoor Kitchen Store in Tampa took care of me. FYI the new grate is metal and will not break.
