How long was the temp at 250 before you put on the butts? Stabilizing the temp before the meat goes on is the important factor.

Was your smoke clear before putting on the steaks? How long did you let the fire burn before cooking?

Did you plug your pit probe in after turning on the stoker? I know they should all be plugged in before turning on the unit.

It is worth it if only for the smile that it puts on my face. Seriously! It is very functional and I use it all the time. Buy and enjoy!

I have no gasket and the stoker works fine. I usually cook low and slow at about 230-250.

I don't use any gasket and it does not affect low and slow cooks at all. You may have to readjust your intake air setting from what you are used to but that is no big deal. Now if you could not control a new intake air hole that would be a dif…
