  • I live in Dallas and there are Dickey's all around town and I have eaten there plenty of times. They are not the best I have had...too "mainstream" I suppose. That said, I do like their sausage...just wish they would thicken and spice up their sau…
  • Thank you for this post RRP! Very interesting stats. It really puts a fine point on the human condition and where each reader stands in relation to the worlds population. I have had the opportunity to travel the far east and I can say first-h…
  • I would suggest hickory and maybe mix in a little bit of mesquite.
  • I purchased an XL and a few weeks later bought a medium. I cook for 2-3 on a regular basis. I use the medium 90% of the time. I only use the XL when I am doing briskets, ribs, pork shoulders, etc. Occasionally I will grill on it. It is a lot of…
  • are you opening the vents and stirring up the old lump left over from the previous cook? Also make sure you are cleaning out the firebox of any ash buildup. Also, make sure you leave the lid open for 10-15 minutes after you light the lump to all…
  • are you adjusting the upper/lower vents when the temp is rising up to the temp you are wanting? If it gets too hot and you try to bring the temp back down, it can take a while as the ceramic heats up and holds the heat. I am assuming the fire bo…
  • He came on a day or two ago and made a comment like "I think you should always use lighter fluid", and that was all it said. I did not see anything else posted after that comment. Looked like someone just trying to cause a stir for no reason.
  • Born in Texas, went into the Marine Corps and lived in California and Japan for 4 years, back to TX...Plano TX just a part of Dallas really. I am a CPA have a State and Local Tax Consulting Company.
  • I got an XL and the gasket is fine...got a med and I had a flashback and melted the gasket on the 2nd cook...still have not replaced it and it cooks fine. I will eventually replace it but only when I have the time and inclination...it does not limi…

  • I believe the directions are on nakedwhiz.com You will love it!!
  • If you can swing the ticket prices, it is a really fun game to attend. The stadium is split between OU and UT and the chants go back and forth the entire game....fun times. They play in the Cotton Bowl thru 2011 and I think that when it moves to t…
  • Oh I agree....but I also know that perfection is elusive....Heck, I am 50 years old and I remember the one mistake I made in the 8th grade....still haunts me!! Like I always tell my son....you will make mistakes....what sets you apart fr…
  • I just emailed the name to you. As I mentioned, the steak was good and I do not want to talk down the establishment and give a negative reference to anyone that may read this. I just like my steaks off the egg better.
  • yes you can overtighten a bolt and yes it will break. My dealer had mine put together so I did not have to assemble mine. But if I bought an egg and found out that I needed a torque wrench to put it together (and I did not happen to own one) I wou…
  • There was an Eggfest in May I think. It was down in Austin. I would assume it is an annual thing. I also live in the DFW area and I would be interested in something local/regional.
  • I like to slice some onion, salt, pepper, maybe a dry rub in beer or water in a aluminum pan and put the sausage in the mixture over 275 to 300 heat on a raised grill. The sausage can steam cook until you are ready to put them on the grill to fin…

  • platesetter and ash tool. Or skip the platesetter and go to eggaccessories dot com and get their rig in place of the platesetter. good luck
  • I don't understand your comment... "You can get some vertical burns, as with any egg, that will burn out with remaining lump so keep an eye on it!" Can you clarify?

  • I just got my egg accessories for my XL and now I can drop the grid, raise the grid, add a drip pan, add a cooking stone, add both, add another cooking level, the options are seemingly endless. So, while the XL can be set up for a drip pqan with th…
  • I have an XL and a Med so I can not comment on the comparisons between the LG and XL. That said, the XL holds temps great, is airtight, gets plenty hot for Trex steaks and heats even...sometimes a hot spot on the back side for some reason. The d…

  • I subscribe and I like it. I find that they have good tips and recipes and I like the product testing they perform. I have bought several items they recommend and have been happy with them all. I have tried several recipes and all of them turne…
  • You tell it to him stike....you were the first? Is Celtic Wolf trying to steal your glory? Unbelievable!! Everyone knows that more posts equals more knowledge and expertise.
  • just scrape off anything that stuck. Do not wash in soap and water...and do not put it in the dishwasher. It will get that "used/distressed" look when it is used...that is normal.
  • Mine is as follows: Band width is 1.25 inches. The holes where it is mounted to the egg are 1.0 inches long. You asked for the bands "diameter"...not sure what you are asking so I hope this helps.
  • I just bought an XL a month ago...Then I bought a Medium a few weeks ago. The XL can be used like a weber....put lump on one half of the grill and leave the other side empty so you have a "safety Zone" if you need it. The large, based on what yo…
  • Might want to put your hickory chuncks on the coals rather than in the drip pan....not sure they will smolder and give off the smoke you probably will want.
  • I bought the XL and a few weeks later bought a Medium so I could do different type cooks at once. Like the others here suggest, If I had it to do over again I would have gone with the large and a small/med for the same price as the XL. More versat…
  • a putty knife should work
  • I forgot to mention that I was just ribbing you in good fun. I came off a barrel smoker about a month ago and man do I enjoy the ceramic cooking...much easier. This is a great forum with super nice and helpful people. Best of luck!!!
  • OK...let me get this straight...you bought the egg...put it in the garage...and you are cooking on the barrel smoker on this nations Birthday while the egg suffers in the garage??? Do you really think that egg will cook for you after this??? NO!…
