I did the same yesterday ,I always did 311 but Sunday put on ribs at 8:00 am @ 230 ish temp ,sauce last hor ate at 5:00 ,Next time wpold on;y go 8 hrs ,but were very good ,with almost same as 311

Yes do 250 for about 3hrs ,dont put on or in drip foil ,put drip pan on plate setter I like Jimmys Dean hot stuffed with what ever you can find ,YOU will love them

No wasn't me but But I think you need to start thinking about a mini ,What if some kid starts crabbin ( not a clone kid ) want a hot dog or a big burger ,your all set

I rub with olive oil or evoo koser salt @ 350 for 45 min ,then open up the gates to get 500 -600 and throw on the meat ,
Like gramps take the foil off get just a little smoke flavor

Practice your temp control ,When I got mine I just lit and dint even cook ,Did you Do the $ bill test ,its a MUST if your going to do low& slow ,find out where 250 -300 350- 400- is on your lower vent ,really once you have that you are long way …

I love all my eggs
1st large and it still the standard to measure all from ( Very Very Stable )up tp 30 hrs at 225. If i could only have one this is the one I would have

More temp testing sat will find the leak if there is one
But think about this I filled at 9:30 went to 400 at noon went back to 250 at and I got it to 575 for the steak on 1 fill I think I am going to love this mini

I am sure I will also ,I know it not like a large they arte so stable ( Just set it and forget it for hrs and hrs)
but if mine is tight and I think it is you should be able to do a 225- 250 ,but you are heating a very small
area I think its so qui…
