185 dome would be around 165 grid. I doubt you can hold 185 dome in the first place and secondly you couldn't get the brisket to 190-205 if your grid temp was 165.

Do it just like you did in the oven except apply your favorite rub and stuff with sausage. I overstuffed my first one and by the time the sausage was done the exterior of the crown roast was overdone, but surprisingly moist and still real good.
