I agree with the wise bird(Spring Chicken) you always want to have the option. I have had my Char-broil 7000 for 11 years now. so you do not have to buy top of the line gasser just top of the line Kamado style cookers (BGE)

It may sound crazy but get a damp paper towel and dip it in some ashes from the Egg. then lightly scrub the dirty area. then just use a clean paper towel to wipe it clean. Also works great on your fireplace glass doors.
If you put the little green feet in between the catch pan and the indirect cooking shelve, so as to have air flow all around it. it will not do that unless you run out of liquid in the pan.
