  • I'm with Serial Griller.. Dust w/ cornmeal, salt and pepper and pan fry. Best fish I have ever had. Homemade hash browns are great with this! That said, if I had some left over, I would smoke it on the egg with some maple.
  • Smoked this morning indirect with cherry and an ice pan at 150. They are now wrapped in bacon and I will finish on the gasser as Iv'e got two pork tenderloins on the egg. Will let you know how they turn out.

  • Try cutting the bourbon with an equal amount of soy sauce. That mixed with brown sugar is one of my "go to" marinades for pork tenderloin. Always a crowd pleaser! Good luck. Janet
