Busy here too - no bears in the yard this year :( Our neighbor cut down all their trees and now we get very few eagles, and NO bears. boooooo
Dang I wish we could get pork belly like that here! I ordered one once from some expensive organic place and it showed up spoiled so I had to throw it out. They refunded my $150 (one belly) but I was mucho disappointed!

I'm not in the pic - I'm taking it. This was somewhere between Jan - March. I went to check on the ribs and there were a bunch of seagulls in our back yard. A bald eagle swooped out of the trees & grabbed one right as I snapped the pic.
I will have Brent try the first sandwich.
But I agree - I think we are safe, and next time I will load the egg up to the top of the fire ring when Im doing a long cook instead of the middle of the fire box. :pinch:
I've made it out of the hindquarter (our deer are tiny - our hindquarters are probably the size of your deer's backstrap).
I also made pastrami out of a hindquarter roast. It was pretty good!
