Play with those little circles in the upper right corner of this site. It will adjust the contrast. The whole white circle will give you the black text on a white background. You probably clicked on one of the others by mistake.
I didn't know that. I bought my replacement myself because I bought the egg from the internet (no warranty) . I hope I saved the receipt for the firebox.

I think he is trying to be true to the recipe. I looked it up. The recipe says "Spread rock salt evenly over bottom of heavy roasting pan; place wire roasting rack on top of salt."
