  • Thanks to all!  This bird will be the one for leftovers at my house, not the big family dinner, so I have some creative license.   Happy Thanksgiving to all my fellow Eggheads!
  • Perhaps an hour of smoke, then increase the temperature?  We get smoked turkey at a local barbecue restaurant that is really good, that is what I am thinking of trying to reproduce.
  • Shhhh, don't want my son to know yet! Big birthday this summer, perfect present!
  • Nice Post! Yes, I thought of Mike as well. I suppose all of us who knew him did. Glad we got to share the times we did!
  • Briskets sure can be awesome, or drive you crazy. I have had some good results, but some better than others for sure. How about a few points on what and how? Was it Choice or Select meat? What was your dome temp? Whole brisket, or just the flat…
  • Yes, I am still with them, and looking forward to being there for many years to come, it is a great company, with opportunities everywhere! Some names may have changed in the marketing, but it is the same company and same table, from Southern Sp…
  • Hey Mr. Chicken, Have you seen the Steve Martin movie, "Lonely Guy"? It was a great movie if you like his kind of humor. Looking forward to seeing you & the Hen in OKC! John
  • If you want an outstanding table, with closed in storage for eggcessories, plate setter, charcoal (three bags) or even the old propane tank, to be used with a torch for lighting, the best I know of is the table from Southern Specialties Outdoor Livi…
  • Chris Can't wait for another fantastic eggfest in OKC! I hope to be bringing some cool new stuff! I have been talking up the big event around here, so hopefully, some newbies will be hatched! I couldn't see the picture of the shirt, but will…
  • I cooked 4 at once, roughly 40 pounds. They filled my large egg nicely, and as I recall, didn't take too much longer than one. I think the 20 hour range, plus or minus a bit is about right, and remember, you can always wrap them up in foil and a t…
  • I agree with both posts. I have mostly done whole briskets, but smoked a flat once or twice as well. 2 hours sounds really quick, and you can't cheat on the "Low & Slow"... Briskets are a little tough to really master in my opinion, but if …
  • Looking forward to a great eggfest! I will be there with a friend of mine, and hopefully, my son will meet us there, too. I have really enjoyed the eggfests I have attended, I am sure you will agree that it is a weekend worth looking forward to!…
  • When cooking pizzas, how has your luck been with gaskets? How hot do you cook them? I made some pizzas over the weekend and had some gasket issues. We were at about 550 - 600 with the standard, gray gasket. I have cooked all kinds of things and …
  • I don't have any official numbers, but somewhere around 500 is what I heard. It was busy, but not too crowded, and I think everyone had a great time. There was a lot of good food and great hospitality. John
  • I believe the egg is sitting on two granite tiles, such as you can buy at Home Depot or Lowe's. The reflection might make it look like stainelss. The tiles do not come with the table, but the feet work very well, too.
  • I used a chop saw, such as you would use to cut steel. A welder or a brick mason would have one, if you know of any shops nearby that do that kind of work. John
  • There are two ways you can do this. You can either post a picture in your message, or you can post a link to your picture. Either way, (as I understand it,) you have to upload your picture to a site that will host it for you, Google has a free hos…
  • Check out www.mykamadotable.com, or search for posts on the forum by that name. It is a first class, metal table with a stainless top with storage for just about everything you might need. Check out the links below, and let me know if I can answ…
  • You have done the hard part, the rest is fun and easy. Now imagine getting together with a few hundred of these folks, swapping recipes, passing around the food and drink, and having a great weekend, and you have imagined the Oklahoma Eggfest, or a…
  • Sorry to hear of his passing, but very glad I had the chance to know the man. He made the Oklahoma Eggfest just that much more fun; he will be missed! John
  • Greetings Eggers, I have not posted in a while; been really busy with the new project we call a house! Yes, I love my table, and had a hand in the design. It was designed specifically for eggers with input from eggers, so that it would have all…
  • These links seem to take a while do download, bt Here are a couple of pictures of the table: Regards, John
  • Dex, Check out www.mykamadotable.com. It is a metal table, but really first class. I will post some pictures of mine as soon as I get a chance. The enclosed table gives you storage that keeps utensils out of the kitchen drawer, and charcoal dry. …
  • Chris, as always, it was indeed a great weekend! You do a fantastic job, and Everything Barbecue is right on the ball as well. If anything, the rain just brought people inside the tents a little more, where we were able to catch up with each other…
  • This is no surprise, you are a great salesman! It was a treat to see you & the Hen in OKC, thanks for making the trip! If Jack needs a snazzy table, www.mykamadotable.com is up and running :-) Best Regards, John
  • Can't wait Chris! This winter / spring has been way too busy, so it will be great to spend some quality egg time with my eggstended family! See you Friday, John
  • Looking forward to seeing you there! I have been out of communication for a while, sold the house, bought a new one... but I will see you there! Wait until you get a load of my new egg table! It will debut at the Oklahoma fest. Looking forwa…
  • The Oklahoma Eggfest really is a good one, you will meet a bunch of great folks from Texas, Oklahoma, Missouri, and who knows where else. Chris really puts on a good party, and Everything Barbecue is an eggcellent sponsor! See you there, John …
  • I can't say I relate, I still love to cook on mine when I have the chance. If the lump is nice sized chunks and the air flow is good, you should be able to hit 650 before you have finished prepping the meat if you start the fire first (I use a prop…
  • I have seen some ribs with a membrane like you have in your pictures, but some have such a thin, hard to remove membrane, it just seems to tear into a million pieces and it is hard to tell if you really gained anything by trying to remove it. I hav…
