  • swordsmn said: That's what we do...just get a good bite.  Dobie's idea of using it in lieu of the dome thermo is good too.  (Swordsmn using spouses ipad AGAIN) Well, I wasn't going to ask but how do you swap the pit probe for the dome th…
  • Dobie said: Pull the dome thermo and put it there. Out of the way on the cooking surface and no fried probe wires.  Doh. So I must be an idiot. The dome thermometer sticks out and my Digi Q has a roach clip for the pit probe so I can jus…
  • Maybe I will try indirect next time but we did enjoy the wings being crisp. I guess I didn't peek enough while cooking. I saw some pictures where people used a rack to cook the wings. I figured if you use a rack the grate temp has to be even all ar…
  • Carolina Q said: I don't worry about smoke leakage. If mine leaked (it doesn't) I'd just make more. As for temp control, airflow is airflow. If the gasket leaks, just close the vents a bit. Doesn't matter where the air comes from, just that…
  • grege345 said: I run my probes thru the top opening fwiw. My gasket is still good after a year Interesting. I like that idea but I would worry a bit about the meat probe getting pulled when I open the dome. My top vents are nearly clos…
  • The meat probe is thick. I think it is the SMOKE HOUSE PENETRATION PROBE - STAINLESS ARMOR Model: 113-178. One thing that did concern me is I hope to one day get a controller and wondered if the problem would persist with those probes as well.  Co…
  • Here you go. The probes are now on either side and I think it is working. They are probably at 2 o'clock and 10 o'clock. Normally they would both be at 2 o'clock and in the past it worked without letting smoke out. The second picture shows the sligh…
  • I have been doing rubs with the chicken but I like the idea of herbs like you did. I am not sure I'm brave enough to wing it but maybe I can work up the courage.
  • I tried again using some feedback from here and the results were much better (it couldn't get any worse) but we still need to adjust some things.  This time I used the generic dough recipe found on the BGE site. I found it very tasty so I think we…
  • Looks great. Is that a flat? Looks like it might be a full brisket.  I would think the liquid would dry up but seems like that isn't an issue in your photos. I am also worried about the pan leaking in the middle of a cook but you didn't use a disp…
  • I have a nest that came with my XL but I really want a table just for more prep and storage space. I like the concrete top. That is perfect for an outdoor cook table.
  • henapple said: I used to turn mine on high and lay it in the lump...best not done unless sober and don't if you're distracted by shiny objects. That's why I'm avoiding the mapp torch or weed burner. So I tried it twice more and the …
  • I had it on high heat but I ran the low fan speed. I was holding the gun about an inch away but near the end I was practically touching the lump. I didn't want to block the air flow thinking the gun could overheat. The weed burner just scares me. I …
  • Went with cherry and peach. Nearly had an epic failure when the probe only showed 82 after 2 hours. The spiral cut makes it hard to get a good reading. But it was very good and not dry. The outer pieces were smokey and the inner pieces were sweet. I…
  • I noticed you used the CI grate. Have you tried a CI skillet? I just used my CI grate for the same thing I was underwhelmed and annoyed with the maintenance. Seems like a skillet is easier to maintain. I suppose I should keep trying.
  • Mattman3969 said: Any of the fruit woods would be good. I haven't used oak on a ham so that is an unknown for me. I would prolly go the cherry/apple combo I was thinking either that or peach and cherry. Thanks.
  • Homebrew in a Portsmouth Brewery glass. This is a pale ale with some smoked malt. Turned out really good. I hope I can do it again.
  • NPHuskerFL said: @EggoMatic‌ Dang! I've been looking at all kinds of pit controllers and haven't seen this particular one. Shoot. Back to the drawing board. I'll pull the trigger eventually but, as of now I'm still rolling old skool. Lol That…
  • I can't help on the temp issue (I assume you took the top off) but do you have a CI skillet? The only pizza I did was semi deep dish style in the skillet. The nice thing was I didn't have to worry about paper or flour or corn meal - just grab the sk…
  • I have not heard of that first beer and I'm in a beer tasting club. Sounds interesting. I am envious of your cooking setup too.
  • Funny that you posted this because after my cook tonight I was upset with my XL Woo2 setup. I tried tbone steaks on a 18" CI grate lowered to right above the lump. I did the same batch of steaks a while back using a CI skillet and they came out much…
  • The potatoes finished at the same time? I thought they would take much longer.
  • What dome temp did you cook at?
  • You might consider 275 to 300 dome. My grate is about 30 lower than my dome. My 2nd brisket was a failure because I didn't realize this and adjust. But I have only 3 briskets to my name so by all means listen to others before me.
  • Our dogs will be 7 and 9 this year. I will be a mess when one of them passes. I happened to see a dog get hit by a car las night too. Didn't sleep well. We tried to find it but we couldn't. Sorry for your loss.
  • Mayberry said: Also, with your experience, how long is it safe to FTC without degrading the quality of the meat? I'll probably have to pull it at 11:30 or so, and guests won't be here until 3:00 From what I've heard you can FTC for a …
  • Is signature called "activity" on this forum? I went to profile but where I expected the text box for signature it says activity above it.

  • Wow, I haven't taken many photos of the dogs in 2013. Here are some 2012 pictures of six year old Hope (gray) and 8 year old Georgia (black). Both rescues. They really aren't THAT close to each other, which makes the picture in the same bed very str…
