The meat is being cooked on the cooking grid. Go with the clip attached close to the meat on the cooking grid. Make sure the probe wires are routed on top of the platesetter legs, so that it is shielded from direct fire.
And I can't believe I didn't think about using maida! Where's that facepalm emoji?? I'll try that. Most recipes equate it to bread flour, but I'm not sure that is entirely accurate.
