If you are doing one or two racks go straight on the grate membrane (removed) side down. Indirect with 250 dome. 5 hours with the rub and 1 hour with the sauce. They will be extremely tender but need teeth to pull them from the bone. The combination of rub and sauce is incredible. I use a liberal amount of rub. Let me know how it turned out!! Good luck
