    I permanently borrowed a recipe from a place I worked at when I was in my early 20's. What clinched it for me was one night we had a burly Jamaican business man come into the restaurant and told the waiter that he has been all over the country ( Canada) and this was the best jerk Chicken he has had outside of Jamaica.

    I don't ever give out this recipe as I hold it dear. I have asked one of my reps who is Jamaican and was also in the culinary business with me years ago, and he said some of the ingredients were not in "true" Jerk but it does taste very good.

    Unfortunately I don't have the recipe with me at home right now but I will PM it to you tomorrow. It is for a large batch but you can knock it down for your needs
