This whole grilling thing is getting easy thanks to this site. Yesterday I went to see my favorite butcher to get a beef brisket. He was out. He talked me into an arm roast. I put Italian dressing on it, then my pork rub. My plan was to wake up early and start cooking. By 10pm my beer buzz wore off so I fired up the grill. I have an XL EGG. I filled the fire box, put 2 starter blocks in. I got the temp to stabilize at 250. First time ever!! Put the meat on, checked it every half hour. Went to bed at 1am. Got up at 7, still at 250!!! I love this damn thing.
