    The secret to getting that skin off is making sure they are black all over. The tough part for relenos is that they still need to be firm enough to stuff. On top of that it can smoke up the house. Personally I don't bother at home. You gotta make a bunch to make it worth it. It's kind of an event thing. Lots of people, beer, and not the main dish.

    Congrats on the Meadowcreek. Those are awesome cookers. Ya'll definitely took the "No pig too big" approach huh?  Can you reload the coal on both sides? I'm looking forward to seeing it, I've never seen one in person.
