  • So is flame normal?  I am just worrying about burning the meat at those high temps.  I'm a firefighter and 3 min in a 650 temp dome and flame and do some damage....?

    For the original sear, the closer to the coals the better. If possible, it would be good to raise them up a bit for the finish.
