    Since you used a UMAi Dry bag would you be so kind to post about this aged pork on the forum there? I'm the moderator over there and aging pork like you did is something new and I think UMAi fans would love to hear about your venture and outcome. Thanks!

    Checked out your coordinates and found you live right across the bay from Delaware.  In the early 70's I was stationed at Dover AFB and used to go just up the road to a little dive by the name of "Sambo's Tavern".  Everything was about $3 ... dozen crabs, breakfast bowl of shrimp, or a pitcher of beer.  No two chairs in the place matched ... in fact, nothing it the place matched.  Plus, it hung right out over the water so it was best to visit at high tide to avoid the low tide smell.  Loved the place 'cuz the food was fantastic and it was priced just right for our income.

    Can't remember if it's accessible from the bay, but wondered if you'd ever visited it.

    RRP here... I'm just tossing this site out for your consideration... I do serve as an unpaid moderator there because I'm really in to dry aged beef, but they are getting more and more converts for their charcuterie applications.
