    I appreciated the comments you left for me on the brisket. I am curious about the time you leave yours in the 'cold' oven or cooler. You mention 4 hours but does this depend on the size of the brisket? Also do you just let it sit fat up wrapped on the foil and therefore its own juices or do you add a sauce to it just before you FTC? Thanks. Nick
