I cooked dinner...

The only time I cooked ribs I had to cook 6 racks because our freezer was accidentally left open.

So I thought I would try cooking just one rack and the side piece. I cooked them at 300 indirect with a couple of cherry chunks. I cooked them for 1 1/2 hrs then I foiled them with butter, brown sugar & honey at 300 for about 45 minutes. I shut down the BGE when the ribs folded in the middle and I left them on for about 10 minutes more. (I had to finish my wine :) )

Then I unwrapped them and put on homemade sauce and cooked them direct for another 10-12 minutes to give them a slight char...these were darn good if you ask me. :cheer:

Kim says these are the best ribs ever...I think he just wants me to keep on cooking. :P :(
