Yesterday I gave a turkey-cooking class for our local dealer, Madison Fireplace & Patio. I demonstrated cooking the Mad Max turkey and gravy. I prepped and put a large turkey on one egg about 7:30 am. It was done about the time I finished showing how to prepare the second turkey. We had excellent weather and a great turnout plus several drop-in customers. In this pic I am basting the demo turkey.
Here I am carving the first one to serve up with the awesome gravy. The turkey had fantastic flavor and the crowd LOVED the gravy.

This one came home with me; I vacuum-sealed the meat and plan to use it for a new tailgating recipe in a couple of weeks. :laugh:
If you have not tried the Mad Max turkey, you need to give it serious consideration for the Holidays. I will be cooking another for Thanksgiving this year!

Looks great! I am going to try my first turkey on the egg (Mad Max style) I have a hookup for some fresh turkey and figure I'll give it a go.

I've cooked 5 Mad Max turkeys now and they are hard to beat - especially the gravy !
I've used Pinot Grigio in the past, but used Chardonnay yesterday - it matches much better in the gravy than the Pinot. -
You will not be disappointed. Max has really developed a top notch recipe!
As in my reply above, I didi find that a Chardonnay matches the flavors in the gravy better than a less dry wine like the Pinot Grigio I used last year. - FYI -

Clark good job for that dealer and yourself.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

Thanks, Tim. I think about 15+ people showed up for the demo, but lots of walk-in customers wandered out onto the covered deck where we were cooking. The whole 17# 'er was gone by the time I finished the second turkey..!

Doing great actually. Just wish it wasn't so far to go. At least I have a background in training so as long as I know what to train for I can pretty much do it myself.

What size pan did you use? Standard size v rack. I assume?

I happened on an inexpensive KitchenAid roasting pan (with a rack) at Sam's last Sunday. It fits perfectly in the large. I had the platesetter in with feet up and spacers btw the PS and the roasting pan. I think the pan is 17+ inches by 13+ inches.
Best to bring one home, cover the pan with foil (to keep from getting it dirty if it doesn't fit) and see if it will fit in the Egg. The first pan I bought will not fit - it is about 14" or so and won't fit in the curve of the large. Kept it for the oven as it was a higher quality one I found at Target.
The smaller bird I placed on v-rack in a standard-sized metal baking pan ( 9x13 maybe?). -

BTW, are you ready for the 23% Medicare cut coming Dec. 1 (I find it hard to imagine this lame duck bunch of yahoos in Congress to do anything before then to stop this automatic cut). Many I know will completely stop seeing Medicare patients if it goes through. It's hard enough to get a Medicare new patient seen as it is. :( :( -
