Turkey ... again!!!???

My son-in-law and I are preparing the turkey together on the BGE. We are doing Alton Brown's brining method; roasting on a vertical roaster; and using Mad Max's ice on the chest. With an inverted platesetter and some air space between platesetter and pan with the inverter in it, I will have an airspace of 11 inches to play around with an 18 pound turkey. Am I crazy? Do I have to put liquid in the pan with the inverter inside the pan? I am hoping to use the drippings for gravy ala Mad Max. Any suggestions or tips you can give me? :blink:

I would put liquid in the pan, it will stop the drippings from burning, also a space between the place setter and the pan - either use the BGE feet, or rolled up tinfoil etc to create the air space. Seems to work for me.
I've been eating turkey for many years and I must say the Mad max gravy is the best I've ever had.

Thanks Dave. Tried to convince my son-in-law that it will be moist using Mad Max method in a V-rack but he wanted to put it in a vertical roaster. He has been doing the turkey for Thanksgiving using the vertical roaster in his weber and it has always come out moist.

you can go with a v-rack or vertical if you have the space . ..as for liquid in the pan. ..a cup of white wine. ..a cup of apple cider ...a cup of broth. ...or some combination of the 3. ...its all good. .. .and will all add to the drippings for the gravy. ...
