My son-in-law and I are preparing the turkey together on the BGE. We are doing Alton Brown's brining method; roasting on a vertical roaster; and using Mad Max's ice on the chest. With an inverted platesetter and some air space between platesetter and pan with the inverter in it, I will have an airspace of 11 inches to play around with an 18 pound turkey. Am I crazy? Do I have to put liquid in the pan with the inverter inside the pan? I am hoping to use the drippings for gravy ala Mad Max. Any suggestions or tips you can give me?
