Stuffed pork roast

We had a great day yesterday. Went to an airshow in the morning, which was a great event for our valley. Free admission and parking, so great for families. A perfect day for it, in the low 80's. We were so busy watching the show, we forgot to eat! I had taken a small pork loin roast out to thaw and decided to stuff it.
Here is what I was working with.
Opened it up and sprinkled with Richard Fl's Indian River Spice mix, sauteed onion, garlic & dried apricots, fresh sage & thyme and blue cheese and more spice mix.
Rolled up and tied.
The clouds at sunset.
Seared at about 550 for 2 minutes a side.
Back on to roast with some butternut squash sprinkled with Pineapple Head & Raging River.
Sliced up!
Plated with fresh green beans and the roasted butternut squash. This was a great dinner.
