Veal Rib Chops & New Thermapen

Got my new Thermapen delivered to the office today. Decided to try it out the first night. Publix had some good looking Veal Rib Chops so I gave them a try.

The Raws: Rubbed with EVO & seasoned lightly w/ DP Raising the Steaks.
