After consulting some experts on this board and getting nothing I had my first try at butternut squash soup.
First a coupla of late fall pics.
OK, roasted some red bells and some crimson hots
Some butternut squash with butter and pepper and some roasted garlic
Some mirepoix in butter and olive oil
Let it caramelise really well
Put the roasted peppers in
Some pinot grigio to deglaze
Added the squash
Cooked down for a while..To be continued when I find the flash card

How did you add the squash? I mean, was it whole, cut in chunks? Pureed? That looks like a humdinger! Details Senor Steven, please. :P
-
Steven, your losing the flash card is becoming habitual.

looks great so far... a little cinnamon and nutmeg will put it over the topcontext is important
-
Looks fantastic Steve. Did you have to sneak some of Norma's Vino or do you have your own stash?

The soup finished beautifully. Really picked up the cinnamon, mace and rum flavours. I think my computer ate Normas flash card, my two are dead and chargers are missing, Brianna left hers at her cousins and Paula won't let me use hers. The soup is the colour of turmeric.
