White Chicken Chili

For a change, the temperature and humidity has dropped and it's actually been much cooler - so it was time for some white chicken chili.
First, I egged some chicken breasts rubbed with Raging river rub ~ pretty boring egg picture, huh?
Then sauteed some onions and celery in butter, added in 5 cups of homemade chicken stock, 3 small cans of fire roasted green chili's, 2 tsp. cumin, 1 bay leaf, some hot sauce. Added 1 can of northern beans, 1/2 of the beans mashed up. Added in the cooked chicken, and
fresh cilantro at the end.
Garnished with sour cream and sharp cheddar cheese and more hot sauce:
It was a bright sunny day in FL today with not a cloud in they sky.

Looks great! I do a white bean and turkey chili just after our Thanksgiving when the birds are on sale. Love the stuff.

That looks wonderful Faith, homemade stock is the only way to go, nice job. Glad you are enjoying this weather, it doe's feel nice for a change.

Beautiful.....! I did some last weekend, but my stock wasn't home made and my plating wasn't quite as nice. Was good though.

I do, however, wonder what you mean by "much cooler"...Like less than 100F. :P
Really though, that chili sounds great. As Steven mentioned, and some other too, I think we have any number of "White Chilies" out there, semingly more popular as time goes. I do one that is a TEX-MEX thing, but I'm going to try your method / recipe on my next go-round.

You are right on. There is a wine for everything! But then again, Me thinks there is an "anything" for "everything".
I mean, like a good whisky goes with anything too! Right?
And, as we speak...Right now beer is going with my prep. of chicken, all though I may have a glass of wine with the dinner.

Yep, it's been proven - wine does go with everything!
