  • My favorite abt is leftover smoked salmon and cream cheese inside the bacon wrapped jalapeno.

I'm prep'g some tonight for tomorrow's cook. I do mine like Mickey by cutting the pepper in half lengthwise. I make a mixture of cream cheese and cooked sausage to stuff them with. I precook the bacon for 7 min at 350 and then put them in the fridge overnight along with the cheese mixture. Using thin sliced bacon allows you more elasticity to work with and it won't take as long to cook. In the morning, I'll prep the peppers, stuff 'em and wrap 'em. I'll probably put some seasoning on the cheese before wrapping too. I plan on cooking them on the BGE with a little cherry smoke 350-400 until the bacon gets crisp.

    Hope this helps...

I like stuffing with the cream cheese and sausage also
  • I stuff mine with just finely shredded cheese and sprinkle a little South Seas Rub.

Here is a link if your interested in the way I prepare and cook them.
