I finally cooked that brisket I've been wanting to do ever since last week at Lake Conroe Egger's house.

Fortunately, the Man Himself, Lake Conroe Egger and his wife Colleen were available on short notice to join us for the taste-testing.

Also, our Egghead neighbors, Lucky Mon (Tom) and Lucky WoMon (Pam) also volunteered to see if I did good.

No one asked for Pepto Bismol. I take that as a good sign.

Funny thing, right when the brisket went into plateau I had to leave to have another scan done. The Guru kept the Egg at the right temperature but as soon as I got home three hours later I had to put the point in foil and let it rest.

Anyway, I now know I can cook a good brisket if I put my mind to it.

    The Flip Video Camera was in the house and she was trying to show off my bandages from the scan the hospital did a couple of hours earlier. More photos, more chances someone would ask, "What's wrong with your arm?" No one has asked so that supports my theory that no one loves me out there in Egghead Land.

    Great post Leroy. You and you lovely wife have a very nice place and lots of good friends to enjoy it with.

    Your brisket was very tasty because I licked my monitor and it tasted just like smoked brisket. :P

    You said you had to leave for an appointment and in the video you sported a fancy bracelet and bandage. I hope all is well.

    You know if I were ever in Texas I would definitely want to stop in so you could put the feed bag on us. :P Tim

    Funny you should ask, I was just about to tell you anyway.

    They call it a "Nuclear hida with kinevac" and takes an hour during which time I can't move. They shoot me up with some glow-in-the-dark juice, turn it on and walk away. To occupy my mind I have to mentally twiddle my thumbs.

    It's to find out more about my collection of gallstones. Seems that I've accululated some lately and they're not comfortable.

    A quick Google search tells me there are many treatment options including removing the gallbladder altogether. In fact, it must be the more popular option because I've already heard from a number of people who gave up theirs.

    Apparently it is an unnecessary body part and once removed, life goes on pretty much as before.

    Or they could just dissolve the thing using medical magic. But then it might come back.

    Anyway, it's nothing so serious that I have to give up Egg'n as I know it.

    Yes, all is well. Just my gall bladder making some jewelry parts, or as the medical profession loosly refers to them - gall stones. I had to have a scan. Seems to be no big deal to lose the gallbladder altogether so I'm not worried.

    Absolutely, by all means, for darn sure... if you are ever down this way be sure to give us a shout. We will tell the Girls to clean up and get ready to entertain a gentleman friend. They love it when new Eggheads come visiting.

    Oh, and we can feed you too.

    Yea, that 'sword' was stuck way back in a drawer in Judy's Mom's kitchen when she passed on. We inherited it. Wouldn't cut warm butter at first but I got out my SpyderCo set and tuned it up a bit. It's really good for cutting watermelons too.

    The rub was a nice surprise, although a bit spicier than I would have liked. Frank and Tom liked it.

    As I mentioned below, the bandage and hospital jewelry was from a gall bladder scan first thing Friday morning. I had to leave it showing so I could blame the hospital if the brisket turned out bad.

    I think I could have done better on the brisket had I put it on later in the morning and cooked it at a slightly higher temperature than I did. I had to stretch out the cook so it would be ready to come off and be sliced within fifteen minutes. I was trying to keep a crisp bark on it rather than a spongy bark like with foiling.

    I'm now one step closer to Brisket Nirvāna.

    Thanks for worrying about my 'wounds.'

    I enjoyed the video. Thanks. The brisket looks like it came out very good. I have used some of their rubs and enjoyed them. I haven't used that one though. The only brisket I have done didn't come out as good as yours looks. Guess I'll have to do another...or ten. :)

    The brisket turned out good but not great (my opinion), so like you, it's back to the drawing board. One day I hope to be able to yell "EURIKA!!!"

    A very nice brisket indeed, however what struck me the most was how patient your friends are, had I taken that long to slice it I'd probably have a few of my friend's fingers in there :laugh: also, I was also fortunate to get one of Gary's Texas Wild rub at Lake Travis, it was so good it's gone now, used it on practically everything loved the flavour.Thanks Gary. Congratulations mi amigo for a very tasty looking cook & documenting it , also it's great to see you & your lovely wife again.

    Thanks Beli. The seasoning was good but a wee bit more spicy than I expected. Actually, I was expecting 'sweet' to be the dominate flavor. There was plenty of brown sugar for it. But some of the other flavors came through very well. Frank and Tom sure liked it.

    As for my slow cutting, remember that I only have one good eye and ten functioning fingers. I'm also clumsy and was heavily laced with rum. Any additional speed to the process would surely have created a red stain on the brisket and quite possibly reconfigured my method of counting from using whole fingers to counting in fractions. I believe everyone realize that fact and exercised restraint.

    The good thing about all this is that I learned to NOT schedule medical appointments during a long low & slow cook.

    I'm just finishing up a bottle of Appleton. Pretty much any rum is good. But when I'm just drinking rum and cokes while doing a project I actually prefer Ronrico. It's light and I don't get crazy.

    I also discovered that we have our very own distillery here in Houston. It's called Railean. Pretty good rum, both light and dark flavors.

    Sipping rum is a different story. A friend gave me a bottle of Millonario one time. It was good.

    The bottom line is I just drink the cheap stuff to make my Coke taste better.

    Yea Mickey, I almost sawed through three of my more useful digits last year, the social commentary one's. Just point in the direction of my commentary and squeeze.

    They grew back pretty good but there's still enough to let me know to take care of them. Plus, that big knife is probably heavy enough to chop a toe off if I dropped it.

    Like most stuff cooked on the Egg, it was fun.
