When to put wood chips/turkey in BGE

When smoking the Turkey, do I stabalize the temp at 325-350, throw the wood chips on the fire and put the turkey in? Or do you let some of the smoke clear before putting the turkey in? Thanks for your help.

    Flash,[p]Let the temp stabilize, then put on the wood. Let the wood burn for about 5 minutes or so. This should prevent any bitter taste. It'll smoke heavy right at first then start to clear a little, that's when I put the meat on.[p]Boccie
