8.28 pound Boston Butt. This pic is 9am, about 15 minutes after it went on.

I've done it about a dozen times, BB, always to rave reviews. Started and finished pulled pork at the Springfield Eggfest last year. Every Egger that tasted it wanted the recipe.

You would be wise to quit opening the lid so much...as the saying goes..if you're lookin, you aint cookin...keep all that heat inside the egg...

I got heat to spare, Wess. No worries with opening the dome. I'm pretty sure this 8 pounder is going to be done in 6 hours...maybe 7. Dome is between 325 and 350.

Six hours in. Veggies have made their contribution and have been removed from the pan. Vee-rack added to get a little bark formation on the fat cap side. Internal temp is 180.

Six pounds. Done in about 4-1/2 hours.

Friends just headed for home. All four of us are waddling around, still stuffed 3-1/2 hours after dinner. The pork was wonderful. Here's the final pic before we descended like vultures.
