Anybody have any ideas for a quick cajun dish for the egg?

First - Geaux tigers, beat them volunteers
There are neaux quick cajun dishes with the exception of blackened fish which I would classify as nuveaux cajun
Sauce picaunt - this is fish Veracruzano but very dimilar to a sauce picaunt
Trout menuire (really more of a creole dish)
Charbroiled oysters (italian creole fusion)
Duck and andoille gumbo
Chicken okra gumbo
Red beans and rice (New Orleans creole)
Turkey, andoille, and oyster gumbo pizza

I'm ashamed of what I did for a Klondike Bar.
Frank, you have got this Lower Alabama old man salivating for some cajun food now. All of those dishes look fantastic..great work!
