Best Brisket Ever

First, let me say that I've eaten good and great brisket all my life. I've even gotten to where I cook a decent brisket. So when I hear someone else say they cook a good brisket I just smile and say show me.

So Spring Hen and I were invited up to Lake Conroe Egger's for brisket last night. Yes, to show us what he can do.

WOW! This one had to be the very best brisket I've ever eaten... period.

No sauce, just tender juicy flat and point slices. The point was just a little better because of the fat but either would have won a taste contest.

Nice smoke ring. That's my biggest challenge on a brisket. Mine are tender and flavorful, but no smoke ring.

LOL! :laugh: Before I even read spring chickens reply post, I was thinking"ketchup?!? " for shame!! Haha. I have my very first brisket coming off the egg shortly...I sure hope it tastes as good as Conroe Eggers looks!

I cooked a brisket yesterday and did not look anything like that. Oh, forgot, I put mine in the grinder twice before cooking in the egg :blink:

This is a good post for those of us who struggle with briskets, 'cause when you say:

Someone said a while back to throw a couple of brickettes in with your lump. Must be the crap in brickettes that does the trick.

I also heard that you should chill the meat before putting it in the Egg. Takes longer to warm up while the smoke doesn't care if it's hot or cold meat.

I just shoot mine with my smoke ring gun.

Much easier and lots of fun.

Yea, I read your post and now I've got to try it. But before I order a grinder attachment or grinder I think I'll just ask the butcher to do a brisket for me. Looks and sounds good though.

You got that right. Looks easier than it really is, even for experienced cooks. This one was what everyone strives for. Frank admitted that he went through a lot of them before he got it down pat.

No injection, no foil, no tough as boot leather.

Yes, move to Conroe, Texas and ask Frank to be your friend LOL

He just cooks the flat and point separate, no injection or foil, rub on the outside and about 225° dome indirect to about 190° internal. Or that's the part I remember. I could be wrong, there was rum involved LOL.

Thanks... Me too. Briskets are more than just food, they're fun and challenging. Being consistent is next to impossible until you get a plan that works, including buying your meat with a critical eye. Not all cows were happy when they became 'previous' and are therefore tough from being stressed.

Can't decide on what to cook in Plano - still time. Bloody Marie's are a given, in any case.
