I bought a one burner countertop induction burner, just because I'm fascinated with the technology. All they say about them is true. The pot (has to be metal) heats up much faster and cools immediately too.
CI is perfect for induction burners.

Hey Molly, my brother has a full 4 burner cook top. The thing works really well, boils water in seconds. Any pans that a magnet will stick to will work. He use Le Creuset and cast iron as well.

We use them at work. Holds temps very well. Response time for temp changes is very quick. There is even induction woks that we use for stir fry dishes.Molly

I've got a couple - the last one came from Tuesday Morning I think and cost about $80. Used one at the NiEGGara fest to keep the sauce for my Chicken Tikka Masala warm.

I have a two burner and it is great. I bought it mostly for holding sauces at low temps but it is nearly immediate heat and I can boil a large pot of water in a very few minutes. If I was doing it over I would rethink the gas.

Little more to it than that. If a pan is removed, it shuts off. If a pan goes dry it shuts off. If you remove a pan the "burner" is not hot enough to burn skin. Most efficient of any cooking fuel.

Correct me if I'm wrong, Steve, but the only reason that the burner would feel hot or warm at all would be from the heat transfer coming back from the pot to the burner ... not the burner itself. I like gas too, mostly because when the lights go out for a week like with Hurricane Ike, I can always boil water for coffee. But it does smell a bit awful if some leaks out.

Gary, You are absolutely right. I work with induction and understood the process before I bought. The surface (of mine anyway) is engineered to dissipate heat rather than concentrate it. The energy from the generator is transferred through a coil by magnetic flux at high frequency and actually creates electrical circulating currents in the ferrous metal in the cooking vessel. At least that is my pinhead understanding.

Americas Test Kitchen just did a product test and review of single induction burners.
One thing to consider is what the wattage of the unit may be. The higher the wattage the faster it will boil. Just like in microwaves.
They recommended the Max Burton at $125 bucks. -
