Texas Pineapple Upside Down Cake

Ever since Colleen (Lake Conroe Egger's Wife) made that wonderful Pineapple Upside Down Cake at the Texas Eggfest, we've been wanting to do one ourselves.

So today while we still had the "Texas" theme running in our heads from breakfast (see: http://www.eggheadforum.com/index.php?option=com_simpleboard&func=view&id=969350&catid=1

we warmed up Lily Large and got out the hardware.

First on the list was a full-size pineapple upside down cake:

We had some batter left over so we opted for some baby-size pineapple upside down cakes:

We still had some batter left so we opted for some pineapple upside down Aebleskivers.

Needless to say, we've been gaining weight. They were all delicious.

Oh yea, I was wearing my "Team Dessert '08" shirt the entire time I was cooking.

This concludes the All Texas Day at the Chicken Ranch.

Thanks... You should see it from Louisiana. Everyone there thinks Texas is shaped kinda weird. But they're just exercising their right to think.

I studied geography in grade school and by the time I granulated most of the countries had changed their names. But Texas stayed in the shape of Texas.

Good eat'n everywhere and we have indoor plumbing.

Yea, it was a fun day. Even had time to fire up Maggie Mini for some burgers, the really sloppy ones the doctor warns against. They were good too.

But now what can I do tomorrow? Been thinking about trying AZRP's boiled ribs. Gotta try it, or at least something close to it. Seems like a good idea for keeping the juices, and we both know that good BBQ runs on juices.
