Guess I'm just lucky. I never notice fumes when cutting peppers. My fingers get a little tingly after I cut 2 or 3 pounds of serranos or jalapenos, but I prefer that to wearing gloves. I always sneeze once or twice after grinding cayenne in my spice/coffee grinder, but that's about the extent of any reaction.
