Another Pork Butt question

I've done several butts but I've never put the rub on too many hours before. My problem is that I'm not going to be home tonight to get the butt ready. Can I put the rub on this afternoon and it will be ok until I put it on around 11 or so tonight?

The longer a rub sits on the pork, the more it cures it, and adds a bit of ham flavor. 12 hours will only add a slight hamishness. Personally, I like that every now and then.

Thanks. It would only be on there for about 6 hrs before I start to cook it. So you think I will be ok?

Either way is fine. I've rubbed 10 hours before and 15 minutes before cooking and couldn't tell a difference in the finished product.

That's good to know. When I'm use to doing something the same way I hate to change but in this case I have no choice because my daughter wants pulled pork tomorrow for dinner. Thanks for the help

6 hours should be fine. The only time I had a distinct touch of ham flavor was from 36 hours.

For me, the minimum time for putting on a rub is as long as it takes for the rub to gather moisture from the meat, and melt into the surface. Can take 1/2 an hour, if the rub is really thick, and the meat is really cool.

"Is it long enough"? I am not aware of any recommended time of rubbing butts prior to smoking, and Ive been doing it 25years. Though I'm sure it's out there somewhere. I really don't see any benefit.

edit: If "1/2 hour" is desired....the first 30min on the egg should suffice just fine.
